Maple Glazed Roasted Carrots

Sweet, tender roasted carrots glazed with pure maple syrup, finished with fresh herbs and your choice of butter or olive oil. Simple, cozy, and naturally sweet.
Ingredients
2 pounds medium carrots, scrubbed (halved lengthwise if thick)
1½ tablespoons olive oil
Kosher salt and freshly ground black pepper, to taste
2 tablespoons pure maple syrup
2 teaspoons chopped fresh thyme leaves
2 tablespoons chopped fresh parsley
1½ tablespoons butter, cubed or 1–2 tablespoons olive oil (for finishing)
Instructions
Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.
Season carrots:
Place carrots in a single layer on the baking sheet. Drizzle with olive oil and season generously with salt and pepper. Toss to coat.Roast:
Roast for 20–25 minutes, until carrots are just starting to soften and lightly caramelize.Glaze:
Remove from oven and drizzle carrots with maple syrup. Sprinkle with thyme and toss gently.Finish roasting:
Return to oven and roast 5 more minutes, until tender and glossy.Finish & serve:
Remove from oven and toss with butter until melted or drizzle with additional olive oil. Stir in parsley. Adjust salt and pepper to taste.
Serve warm.
