Buffalo Cauliflower (easy + cravey)

Ingredients

  • 1 large head cauliflower, cut into florets

  • 2 Tbsp olive oil (or melted butter if you want richer)

  • Salt + pepper

  • ½ cup buffalo sauce (Frank’s-style or your fave)

  • Optional: garlic powder, smoked paprika

Roast Method (my go-to)

  1. Heat oven to 425°F.

  2. Toss cauliflower with oil, salt, pepper (+ spices if using).

  3. Roast 20–25 min, flipping once, until browned and tender.

  4. Toss hot florets with buffalo sauce.

  5. Return to oven 5–8 min to caramelize.

Extra crispy option

  • Toss florets first in 2 Tbsp cornstarch + spices, then oil → roast → sauce → finish roast.

Serve with

  • Celery + carrots

  • Vegan ranch or blue cheese

  • Over rice, in tacos, or stuffed in a wrap 🌯
